A single big power 29 Outlaw is still a pig. Twins aren't that much more to operate compared to a single.
I change my own oil, plugs, drive lube, ect. The initial investment in the tools (12v oil pump bucket) to do that work is a bit pricey, but once that is over with it is really just the simple stuff that is easy to do. One service at your dealership will pay for the tools to do it yourself.
I spend a few hours a month on general maint during the summer.

I think a few were built but not many, by the time you put a 500 or 600sci in it, it probably cost more than twin 6.2's. Performance in a 29 with single will be slow, and with the HP you are suggesting, you better invest in some spare drives.
I think twins are better than you think,

Nice Hull
Lots of Room
Great ride
Not a performance boat with a single.
