Sorry I missed it!
Checking out Shootout winners from last year... don't see a winner for that class (NV2P1 - Non-professional, V-bottom, 27'-31', Power-Adder(s), Single Engine), but the NV1P1 and NV3P1 class winners went 104 and 94, respectively.
Just playing the devil's advocate.

Considering how flat the water looks to be, and how much
lift you have,.....
Might need to add wings the keep her stablized if you
carry the stern section of the hull any higher
