21 pitch props are way to small and also, if I am not mistaken, the motors should not be down with those motors...I have 300xs on my 30 and the best placement for the props i am running is one hole up from the bottom.

You might want to get a hold of Robert Gilmore. He's got a 30 with 225 opti's and from what I remember he is running 64-65 mph moderately loaded with a pair of a pair of 25 mirage's.
