Sweeeeeeeet !! I have the same boat - got 83.3 GPS with all cheating tactics in place - wind, current, light chop, and no fuel. Real number would probably be 81.
Stock 28's, trim at 7, then 5,000 - 5,100 RPM, 87 octane fuel, and yes, wait a while for the last 2 MPH - not sure why you only see 75.4, but first thing I'd do is see if your props are really 28's via a fixture because sometimes they're only 26.5 or 27's in disquise. Your RPMs are down a little too. I would think it would rev higher if the props were pitched short. Is the boat so new that maybe a little break-in would help? I didn't wack mine until I had 20 hrs and an oil change done. At WOT are your rev-limiter alarms beeping at you?
Regardless, congratulations!!

My appologies for the typo Andy, I hit 81.3 not 83.3 - with all cheating in place, so 79.5 tells me that you have all things working correctly. Great pictures, - how many hours do you have on it now? I put 280 hrs on mine this past season and plan to trade up pretty soon.
