best location for horizontal mount k planes on 271?

I'm getting ready to install a new set of Eddie Marine planes that measure 12" x 24". I am concerned about addressing chinewalk at high speeds, and threfore am going with the horizontal mount instead of the traditional parallel to the hull way.
Looking at the transom of my 271, the most logical place would be on the outermost ends where the factory hook is installed. I have removed about 1/2 of the hook and would think mounting them there about 1/2" to 3/4" above the running surface would be ideal.
I just don't know if this area is still a "wetted surface" when the boat is running in the 85-90 MPH range as is expected with the new setup. Anyone have experience with this hull or similar?
