Who made the cam and what is the compression ratio?
The duration on that cam is very mild.
Not much different than stock.
My quick reference book shows
The stock cam that was in the 502 engine
merc #431-850478 Gen VI Roller
224 224 @ .050 and 115.5 lobe seperation
.483 .483 lift
The 500HP is
222 230 with .576 .598 lift with a 110 lobe seperation

how many hours on the motors?
i had my 502 rebuilt last year. first time out, it would BARELY get on plane. Second time out, it got on plane a bit better. By the time i had a few hours on it and was ready to open it up, it was running pretty good. 20 or 30 hours more, and it's definitely jumping out of the hole faster and running faster on top end.
also, i know jack about cams. maybe most of your HP gains were at different RPM's, ie: lower RPM's. My boat went about 3 mph faster when i went from a 19" prop that had me spinning 5100 rpm, to a 23" (borrowed) prop that only let me spin to 4400. I'm going with a 21" prop that will hopefully put the revs in the 4800 rpm range. I think RPM's on these big motors is what hurts them most.
Take it easy on the motors until they have a few hours, then try more prop.

Have you rechecked your timing?
This is a bit of a long shot (but it ran me around for while) if you have a noise lifter or rocker your computer could be sensing knock and retarding your timing. I had this problem on one motor and I lost 4mph until I figured it out.
