68 is pretty bad with a 525, regardless of temp, something is wrong there. That’s 496 speed. I have two buddies with 525s going 79 and 80 which is pretty normal. I have a 24 hydro and I easily hit 70 before I even start trimming the boat. Tabs at 2.5-3 and I’ll pull the drive to 5 depending on conditions.

Keep in mind the the swim platform of a 32 sits extremely low in the water and the cockpit of a 32 is the same size as a 27. It’s very small. You won’t see more speed with those motors in a 32 compared to 29 single with right motor. 29 to a 35 is the only move that makes sense when going bigger.

What prop are you running on that to hit 76? I have a 2003 with a 525 efi and was only able to get 68 out of it at the shootout. (It was hot outside and very humid, which I am sure played a role, but wouldnt think 8mph difference) I was turning 5200 RPM.
