Two really good systems:
www.themotocam.com and https://www.vio-pov.com/

I bought the Vio system for a weapon mounted camera... very easy to use!

Absolutely.

I would recommend going HD. The prices have come down to reasonable and the picture quality makes regular def obsolete. I'm looking forward to getting one myself sometime before Summer.

That's a good place for car racing stuff....with a bit of work you could easily make it work in a marine application
