How are the guys able to center in on the subject matter? Id have tons of video of just water, with a slight chance a boat would happen to fly thru the viewing window! Are they able to point/steer the chopper by seeing what the cameras are seeing in real time? All of these videos look like someone is on board taking the shots, but when I see a chopper coming back to base, or doing a flyby of the chopper operator while he's in a moving boat, catching the operator in the video, it looks just like he is using toggle controls to steer the chopper. I don't see them looking at a monitor to fly by the cameras view

You can add FPV (first person view) to the phantom 2, the phantom 2 vision comes with the hardware already integrated for FPV. you just need a tablet or smartphone to see the video feed.
It actually is not that hard to get your subject in the frame. The copter has red LEDs on the camera side and green LEDs on the back side so it is pretty easy to see which way it faces. Also you can adjust the tilt of the camera from the remote.
The real reason it is easy to keep your subject in the frame is that both cameras have very wide angle lenses so they capture a huge area.

Quadrotors gotta be so much better.
Here's something new from UAE:
The United Arab Emirates hopes to start using drones to fly government documents to citizens and is offering a $1 million international prize for unmanned aircraft that can improve the quality of life in the oil-rich Gulf state, a government adviser said Wednesday.
