I am trying to make a boat run a whole better.

its not a Sonic boat

Lower COG will help a lot of boats out especially in areas of . chine walk, more stable running, flying more level in the rough plus corner handling will improve.

Do you have room to move the engine forward???
If you use a Stelling box, you can run a driveshaft and lower the engine some as long as you maintain appropriate u-joint angles.
A Stelling box also has 3 holes to pick from for mounting height.
