Is this interior going to be something crazy and special or does it typically take two months to do an interior for a boat this size? Does the boat have a full cabin in it which is why it would take this long?

As mentioned in the first line of the story and other stories on the 478, the boat does have a full cabin. Should it take two months? As you kind of suggested, that does seem to be a long time but (as you also suggested) it also depends on the level of detail. For sure, it's a custom cabin (and cockpit) of course and "custom" takes time. The folks at Skater aren't giving up much detail on the interior at this point. But the next update should have at least a few pics.
