Just a follow up to say this is fixed (at least temporarily because I think there is a slow leak in the system somewhere). I contacted the previous service dept. where the boat was stored. Apparently you simply feed seastar hydraulic fluid into the helm station with a hose/fitting and slowly rotate the wheel back-n-forth many times with the engines running. This pulls fluid in while letting air escape into the upside down bottle (in your hands). The air escapes because you put a small pin hole in the bottom of the bottle. It sounded too easy but I just made a 140 mile 3 day trip after doing this without issue!
