I'd assume the app can do it, that is a basic function of smartcraft. On my 525efi and Verados it is VERY accurate. It will be within a gallon over 100's of gallons.

Can anyone advise if the Vessel View app can record fuel used during a certain period of time? Say for example I want to know how many gallons I used today, can it do that with some level of accuracy?

Just a heads up, I have it on my 2004 496HO. I thought it was useless as I could just get RPM, hours, and speed. I asked on another forum what I was doing wrong as I wanted more info from it. It turns out you have to swipe the screen a direction to get to another page of gauges, and you can customize the view somewhat. I haven't had the chance to try it out yet but do know it was user error on my part.
