I do appreciate the input based on wisdom. That's why I chose this site. You can't have your cake and eat it too.
A boat has to.turn so many RPMs for so long compared to a car. I tell my car clients a boat is like running 80 to 120 everywhere you go. I'm so Grassroots it's difficult to fathom the OB, but that's just being stubborn.

High HP non stock BBC.
Stock HP in the range of the modern OB's (350-500) and the BBC is reliable, just not as much fun as the OP seems to want.
The biggest advantage the new OB's offer is clean sheet designs (meaning from day one to be a highly loaded marine motor) and in the case of the new Mercurys crazy low weight.
Like you said combine that with the new light weight cats and you have great speeds, ease of owner ship, but high insurance costs.

Trying to bring this thread back on track:
If you want to trailer to those places and simply go boating, get an outboard cat.
If you want to trailer to those places and go boating really fast, get an inboard cat with QC4Vs.
If you want to trailer to those places and spend day one with your a** up and your head down the engine bay, and day two, three and four waiting for parts to arrive, and then maybe go boating on day five, get something with a big block inboard.
Don't fool yourself.
