You already know the answer. Parting it out is going to get you more money than selling the whole boat. Dude had a REALLY nice triple 700SCI / NXT 45 Sonic out in Havasu and couldn't get it sold. Think it was down to 140 ish. Decided to piece it out. Hate it when it has to go that route but triple engine performance boats are a small buying pool on top of a small buying pool.
But if you're looking at boats to upgrade to, it may be worth working out a trade in for what you want.

btw: i have a huge family. Most Each family within our large family Have one or more boats. We have more females than males. All learn to captain s boat by early-mid teens. Not uncommon to see one drive by, by themselves or with friends. Not just small outboard boats but 30’ + twin big block boats. So, moms, aunts, sisters, cousins, etc. Go places, take people skiing/tubing/wake boarding / wake surfing, etc, etc. It’s not just a hobby for us, it’s a lifestyle.
We don’t camp out on the boats though, so I/we have no valuable info there.

I don't know if you were joking but I've seen a bunch of offshore boats converted to CC's. Saw an older 32 Baja Oulaw, a 42' Cigarette Revolution, older Scarab. I think it's a fantastic way to make a boat work.
You could easily sell off the parts to pay for the conversion. Strip the boat down and push the helm bulk head up to about 5' in front of the Vee birth and then build a new bulkhead with door. by a new console with T top, put a bracket on and slap 3 450's on it lay a floor down in the engine compartment and ditty done done - custom built CC! The ones I've seen done in the past came out very cool. I wish I could find the pics of the candy red 42 Cig revolution they did in the bahamas. Came out so good looking.

nice ! but its a ton of work ! I would not have any problem doing if I had the time... but not the case at this moment... !!!
