I don't say "you may beat my prices but you can't beat my meat" for nothin'. It's all in the smoking. Mix hickory and maple. And be carefull not to over season it. You want to let the natural flavor of the pork shine through.

I remember his name was Elder, and he towed his cooker/smoker behind his old truck. At one time he was on Sunrise Blvd. in Ft. Lauderdale. He used to come by the shop at noon and we would feed like kings.
Only problem was you would go into a food coma for the rest of the day! Damn good ribs....
