Once in a while there is a set in the classifieds. There is a complete 380 setup for sale in the swap shop.

I am certain that your drives will hit the 380 plates when fully turned though and you really don't have any way to put in a stopper without hyd steering.

I tried the 380 plates on my straight bottom 42 Fountain. They sucked. Way to sensitive to trim adjustments. I waited and thought I would get used to them after a full season but nope. Went back to the 280's. I think on a step bottom or even with horizontal mounting they work much better.
And yes they will hit. My drives are on IMCO boxes and I still had to trim them 2".

steering is on the list as well. I figure I will have to trim the 380's since I have a an 8'beam and side by sides.

With you current stock steering, you would have to cut off more of the plates than if you had hyd. steering.
The stock system allows the drives to turn a lot more than hyd. steering does. Probably 2-3 inches more.
