Weird temp/gauge issue going on

Finally got a chance to run the boat this week after sitting all winter. I did a new dash/gauges this winter, along with wiring behind the dash.
Problem is, my starboard engine, shows thats its running warm. I've owned these engines for 4 seasons, and they have always run cold. Water temps always at 100 degrees, and oil temps after the cooler were always cold, max on a hard run was 130*. No water thermostats and crossovers. Weird part is, the other day we had it out, and water temp gauge creeped up and was at 150-160, and oil temps got up to 210-230*. Thought maybe I had a impeller going bad, so i put a new impeller in today and ran the boat, same thing. Im getting tons of water out the exhaust. Even pulled the inlet hose at the crossover coming from the sea pump, and its coming out like a fire hose. Then pulled water hose from thermostat outlets that feed the headers, tons of water there too. The temps were showing climbing on the oil temp gauge once i got on plane and cruising at 3000RPM, they were showing 210+. Even when I dropped back to idle off plane, nothing changed, oil temp didn't cool down, nor water temp. If I shut the engine down, but left the key on powering the gauges, after a few minutes the temps on the gauges would start cooling down.
Im thinking it must be a electrical issue? Judging by feel, everything on both engines feels the same temp wise, even though the other engine is showing its running cool, like they always have. The water coming out of the thermostat housing feeding the headers was warm, but not scalding like 160* water would feel.
Could this be some wacky ground issue or something with the gauges for that engine? I plan to get a infrared temp gun and see whats up.
