If you have room to change the oil filter you can use a thermostatic adapter. I used this Earls 504. Oil tstat begins to open at 160* and is fully open at 180*. -10 ports.

These guys make good thermostats that flow up to 20 gpm, and you can get them with -12 AN fittings. They have sandwich type adapters too but no flow rating on them.

I run the same Hardin block adapter that texascuda showed. It works flawlessly. Before I added it, I could wait 20-30 min. To show any oil temp. My temp sender is in the pan of my na 540.

Not sure if you were asking me, but my temps have been between 180 and 210 up to 4500 rpm. The temp creeps to 240 if I run hard@ 5400 for any more than a minute or two. I just upgraded my cooler this week to see if that last number can be kept under 230. I am also closed cooled at 150 water temp.

240 in the pan is not a bad reading at all though ... that’s reading the hot side that’s actually a great temperature
