There could be numerous things, the first step would be to scan it and see if there’s any stored fault codes and go from there, without that anything is a guess,
then somebody will have to monitor the data while issues acting up and diagnose

do not understand really whats going on here. Both engines shut down completely as NOT running or they are running in guardian mode and then shut down ? How do you know your in guardian mode ? what is telling you that your engines are in guardian mode ?
Do you have warning horn(s) that go off ??
What testing have you done, Fuel pressure testing ? run the engines on a remote fuel supply to see if anything changes ? Since both engines are doing the same its a common source causing the issue per your post ---- (Both engines at the same time). . SO lets think what are common things shared on marine running engines. = Voltage and fuel
I would focus on those 2 items and do not waste your money on a scan tool.
how are your batteries wired and have you checked voltage especially when the engines shut down ?

Thanks for all the information. I do believe it is a voltage issue as the boat ran fine today after charging the new batteries overnight. Thinking it may be a bad alternator. Even though the gauges do not reflect any issue with voltage.
