Default Quench, Head Gaskets, and SBC's Oh My.

On the last motor I put together I had the machine shop take .020 off the deck leaving the pistons in the hole .005. I ran a Fel Pro gasket with a compressed thickness of .036 I believe, maybe it was .034. Which put my quench area somewhere in the neighborhood of .039-.041. Did I have it right last time or should I do something different with the new motor I am having built.

Also looking for suggestions on Head Gaskets.
