I assume your RPM range is 4600-5000 RPM, you don't note which 5.7 or the year. If that is correct you cannot turn more prop(higher pitch) you might be slighly under revving if it's 4700-4800 RPM when the boat is light.
Also I think your weight is off, I have a 285SSI the specs say 7200lbs dry with a single engine, you have twins, add a few hundred to that
