Single 710 Ilmor/Indy or Merc 700/ITS would be cool in a 28. I still think twin SBC/Bravos would be best, the Ilmor 570's or Mast 600's for SBC power.
I like the big single/six drive idea but not as a spec boat.

I also like the Twin Small Block. Strong, fast, reliable. The bravo based drives should last decent.
IF you go with any big block power in any size PLEASE do not install crappy bravos. IMO more power needs Arnesons, #6's, Indys, etc.
Tough to know what will actually SELL and help the company. But IMO someone buying a new Offshore boat is buying it for the sole purpose of SPEED. SO whatever you do it better be fast, impressive fast, still crush waves better then the rest, but FAST!

as much as im loathed to say this, I think anything but mercury power is going to kill saleability. relatively unknown boat with completely unknown power.
remember , one off custom stuff may be cool but you need to think of this from a potential buyers prospective.
if im a working man and am going to finance this thing the last thing I want is to have motor issues 3 years into the payment book.

in my business I buy and build what will sell, not what I like. something done as a spec boat has to appeal to the largest range of buyers possible.
if it was me ,I would build it with no cabin, a three pack and race hatches. and I probably just eliminated 98% of buyers.
