looking at a sunsation 32 that has 6.2mpi motors. I would like to put 500efi blue motors or 496s in it. Boat has bravo 1 drives. My question are this is kinda a winter project on a beat deal kinda budget. Are complete 500s hard to find whats average selling price? Would it be a pretty easy swap. Anything im overlooking

Make sure you have room width wise, the big block is wider than the small block or else your into filling the transom.

Why not some SC LS motors?

On a budget I wouldn’t buy blue motors. You can make facsimiles of them cheaper. They definitely bring a premium, but you could resell them later.
