I had an old 233 with stock 260's. It had 19" REV 4's, pulled hard from idle to top end. Can't remember what the top speed was but it wasn't crazy fast.

What is the pitch of the current props? Did it run before all of the work?

No mid range...are you going by AFR or seat of pants dynamometer? My Quickfuel 750 has a hole in the fuel supply at 3700 RPM. I'm working on it now. I just went up to a 6.5 power valve from a 5.0. If that gets me part way I can go higher. And can add size to the power valve channel restrictions.
With Edelbrocks you would use a softer spring to bring in the enrichment sooner, and a skinnier rod +/ or larger jet to add fuel...If you were having my issue.

I misspoke, With Edelbrocks you would use a stiffer spring to bring in the enrichment sooner
