Thank you frankenstein I did a twin outboard install on a south american banana boat a few years ago set it up counter rotation, ran fine the customer changed it to same rotation & about killed himself when he cracked the throttles wot thats why I asked that question.

Alot of good responses, but in my opinion, none of them answer the problem. I don't have an answer, but if your boat makes an extreme turn all by itself, and does this more than once, it isn't a " lack of experience in a go fast boat" issue. Their is a mechanical issue. I wish I could help more, but I don't turn the wrenches, I just run the crap out of her.

When the boat comes up on plane trim the drives up a little at a time you will feel the difference & the rpms will come up the boat will feel a little looser but easier to control if you trim too high you will vent the props youll knoww when that happens trim down a little from there & you should be fine

How much play is in the steering (how far can you move the drives side to side setting on the trailer?)

you may have a very bad hook in the hull. take a 6 foot straight edge from transom fwd on the bottom of the hull, check strakes and all surfaces you should not see light where straight edge meets the bottom. if there is very little gap I wouldn't worry. but it is very possible with four blade props and a low x dimension may be causing a lot of stern lift at higher speeds.
