Canopy OL vs. open Fountain - how often do you put yourself/boat into a situation for a high probability of a rollover?
OL - Fit, finish and a fast hull that would be unique especially with the canopy... canopy and AC is a next level of boating.
Fountain - definite history, sooner than later you are into a refit/ possible structure work unless you are paying for a boat that is already done... but there are a million Fountains ( * not many PR)
Someone mentioned the new OL couldn't keep up to the old fountains... result wise you can claim that but you have to temper that with 15-20 years running the same hull, same course, those boats should be showing up already running as fast as they can without swapping another prop just on experience and past performance notes... the OL was getting better but testing was basically limited to that at the race .......and, the Ol has the official record
Only true answer is to run them and find what you like, not what the crowd on the dock thinks...just the same as some love a sit down boat, others want to stand up - all comes down to personal preference and comfort. (referring to Outerlimits SL and SV's - both great boats - different feel of each that you either like or don't)

Well the OP's original question is about safety. Not speed, looks, or the BS.
Is a canopy boat safer than a open boat..absolutely. Can it be dangerous..absolutely. Just like any fast machine you need to operate it correctly. You need to strap in just like a race car.
So the question is about safety so construction is also a huge part of safety.
Is a outerlimits stronger than a fountain,,, yes!
I'll say they're the strongest in the industry.
The outerlimits canopy boats have carbon fiber roll bars that are a integral part of the hull. The windshield is very thick and ultimately becomes structure. The entire hull is completely hand laminated together which adds a high level of accuracy. All the stringers, bulkheads, transverse, roll bars are one. Our boats are over built and that's what make them Outerlimits. Our lamination schedule and process leads the industry.
Our boats are rigged and assembled with a offshore punishing mindset. Not a production line boat what so ever!
Though many manufacturers struggled with keeping the cockpit cool the new ac systems have come a long way. The latest 46 cat to come out has probably the best designed ac to date.
So at the end of the day comparing a canopy to open boats is a apples and orange argument Imo. I guess it comes down your boating style and you need to ask yourself what do I want to buy.... a mustang or a supercar...!
