There are thread strength calculators on the web to determine the shear and tensile strength of hardware based on the thread details (minor diameter and pitch) and the material properties. Like someone said though you need to make sure the 300 stainless is really 300 series stainless..there is a lot of junk around.
What is the deal with anti seize? Silicone sealer would limit the galvanic corrosion but not very well . Here is a good reference for what actually occurs between aluminum and stainless (or nay dissimilar metal)

just got done drilling out 32 bolts upside down, and yes I have turbo sockets and every easyout known to man
