EFI is always worth 5k+ more because idle, fuel economy and overall reliability "should" be better. 900 is a big difference from 1100 so you have to basically pick which direction you want to go. You can have a 1100 hp motor, which cost more, only make 900 for extra reliability.
Otherwise, a well built 900-1000 hp motor can make it approx. 250 hours before rebuild (hydr roller, low compression). 1100 would be closer to 200hours. Of course this depends on how hard you run it, but since its a Cat, it's pretty easy on motors.
SC'd motors always make power easier than massive over-stroked high compression motors and last longer. If were talking 500-700hp, then NA motors work very well, but getting to 1000hp is a bit tough, and it still does not compete with a supercharged motor. Also, going to overstroked motors limits max rpm, and your 36 Nortech will like 6000+rpm.

Dustin i have a pair of 3.3's. with moac from some 525efi's. I understand the blowers top out at 900 hp with 540's or bigger. Is there more left in them with the use of ice injection reliably for the odd poker run say 1000 hp?

I regularly use 3.3 Whipples on a 598 ci engine with a hydraulic roller to make just over 1000 hp (my 925 efi). I have several in the area if you would like to take a test ride. I have a pair in a 38 Hustler with 217 hrs, a carburated pair of 598's with a 3.3 with about 80 hours, and a single 3.3 efi in a 28 Nordic heat with over 100 hours. These boats are all local to me.
I have also done numerous engines for Nortechs. I've built engines for several 36 cats, 43 cat, 50 cat, a 43 vee and a 39 vee, so i am very familiar with their boats. We've seen this question many times before I've been a member and advertiser on OSO for a long time it is important that you know there are many engine builders and engine suppliers that will sell you entry level components in an attempt to undersell the competition in the sport of speed you get what you pay for I have always said if I have to build an engine to suit the customers need I will use only the components I would use for my self I have always used American made iron and now days you have to watch some manufacturers and really rely on your builder for the experience. I have poker run packages from 500-1400 hp on pump gas and racing engines from 600-1500 hp and they all use the same internal components such as crankshafts connecting rods and cylinderheads the difference is in the camshafts weather they are hydraulic rollers or mechanical rollers. Also ask what kind of service you're going to get when you have an issue.
