sounds like to me like the choke is snaping shut,,make sure the choke has power going to it and a good ground..their electric and the coil on the choke may be going bad..it will suck open undereway but will also make the engine die..

Carb Change?

Just a recommendation but you may want to just change the carb.

Make it simple with easy carb tuning. Also it's inexpensive and Compatible with "gasohol and blended fuels". Just a stock 502 with a not so high RPM WOT so it should be perfect.
