Why do the hero run setups?
As do we. We actually own our own sets of Stellings, E Tops and Gen X to aid in getting the setup the same as the boat. We do run the water out the exhaust.
We don't offer a NA "Pleasure boat" engine over 750hp. It can be done sure but as plenty have stated above there's trade offs with everything. A pleasure boat has to shift, get on plane, expects a 200+ hour service interval and in a lot of cases cannot utilize dry exhaust. Build a mild blower motor and solve all of those issues.
The C Class spec engines we built were dry sump, 7400rpm, race gas and quite radical. Needed vent tubes to get the boat (36 cat) on plane and had crash boxes. Every 3 races they came apart and were freshened up. 750hp 468cid. Thats when races were 100+ miles but still. Not pleasure boat friendly at all.
