One thing you have to consider w/engine height is if and how much your hull lifts at speed.
My twin O/B 24’ Sonics and current 25’ Checkmate are quite a bit lighter than your hull and they lift quite a bit at speed.
They also have a pad/semi pad at the keel which increases lift which I don’t think yours has??
I set my prop shaft center lines (how we accurately measure) depth based on that and not the bottom in front of the motors.
For an O/B boat the easy answer is hydraulic jack plates do we can keep the motors down for ease in planing, stability at lower speed etc.
Once up and running, we can raise the motors.
When mine are up, they will be even w/the pad/keel.
And yes, you need water pressure gauges to assure you don’t run the motors out of water.

Update!
turns out I had a bad engine ecu. Replaced it yesterday and took her out today in terrible conditions and she did great!!
so twin 300s got me to 66mph on the gps with nasty wind and snotty water. Also the transom bracket is taking on some water so it had probably 200 to 300 lbs of water in it. So she has a little left in her. When I got the new engine computer from Simon motor sports they put a 345 tune on it. I will send the other one out later this year and get it done also.
With her being so light she glides on top of the water like a much smaller boat. Loving it!

What RPM’s you hitting with those 22” props.
I think with a little finagling you should be able to get that in the upper 70’s or better, no???

I also need to find the leak in the transom bracket because its holding about 40 gallons of water and that's not helping.
Was fun flying past all the fishing boats.. I mean high performance center counsels as they call them all weekend. A new thing she will do is when I have her trimmed out for topend and go down to cruise it will porpoise some until I feed in a touch of down trim. Its no big deal just something new I would assume since its so much lighter and the CG shifted back some. Felt like a heavy tank before now she is like a sports car.

I can drop 40 gallons in her and be good the whole weekend. Before it was 40 gallons for a single day out. Not to mention Filling up gas cans and fueling on my lift sucks so doing half of that is huge.

Almost have 100 hours on her since the retrofit now. Loving it. Use it every weekend and sometimes take her to dinner during the week.
got the other engine tuned now and she is right in the upper 60s about 68 or so now. I just serviced all the 100 hour items but might order new impellers and while I have lowers off swap them from left to right.
had a buddy with a scarab 302 get about 3mph gain by spinning them in. So that would get me past the 70mph mark.
