Redoing bunks and brackets

Anyone have a good procedure for doing this? I would like to rip off all my bunks, brackets, and start fresh. The bunk brackets are the cheap U bolt type, and want to go to a fixed style weld on brackets.
I guess what I am asking, is there some sort of blueprint or template I can make? The current setup is really not even good enough to go off of.

When i did mine ,,,,i had the boat hanging on 2 a-frames and lowered it over the trailer.
Then built the bunks and bracket thight to the bottom of hull, tacked them on and then pulled trailer out and finished them.
Perfect fit and easy if you can hang the boat.

I just might be able to do that using a travel lift. I could probably talk the marina into letting me use one for the day, and do it that way.
