Block off plates are available at any auto parts store or Amazon.

I didn't want to simply block off the fuel pump mount because the lube was coming out the seals and being thrown all over the engine bay.I wanted to be rid of the whole misconceived idea.

Seals are cheap and once you remove the fuel pump, you SHOULD not have any more issues. I don't see why you even need any lube in there if you are not running a fuel pump. Any conterpoint input to that?

I wasn't sure if the bearings used the lube and or the eccentric for the fuel pump. If anything siezed because of lack of lube, it would ruin my day. Nobody seem to have any definitive answers, so I just wanted to be done with it. I know I could have stayed with the Dennis Moore version that kept the fuel pump, and it would have been a great improvement (and much more reasonably priced), but for me, I was done with that setup.

Yes the OE pump bearings are open design and use the lube in the cavity for lubrication. I have an aftermarket pump with sealed bearings, so if fuel is leaking into the cavity it won't make the lube a lower viscosity for bearing lubrication.
