The outdrive is not cooled by the water intake. Why don't you try and fix the cooling problem. That is a pretty simple setup. Pump mounted on the front of the engine, easy access.

I blew a power steering hose a couple weeks ago (age related). I went to a local hydraulic shop. In and out in 15 minutes. $25 for the fitting $25 for the hose installed.

I have Volvo’s in my Cobalt. It is the same injectors. Why would you need to reprogram going from 5.0 to 5.7? That is I would be looking. Hook a computer up they don’t lie.
