You can get away with installing sending units for the gauges that do not work. We did this on early 2000s power play, it was a lot cheaper than AGI boxes

A 250 is 250cid, an 871 is 436cid, I would recommend upping the blower size as the others stated above. With the 250 chiller combo you will need to spin it up even higher, just not a great setup.

Pull the sender as others have said, it may not need as much attention as you think. For verification go in with a cheap cell phone scope camera, may save you a lot of work.
